with your child's teacher doesn't have to be a scary confrontation, if you
follow these tips for improving the parent / teacher relationship.

Planning
alight supper or fancy party with an Italian theme will no doubt involve pasta
and one or more sauces. Add Focaccia, a flat bread rubbed with olive oil
and garlic, a bottle of Chianti or your favourite wine, and it's complete!
But
if you just have a minute to stop at the deli, and but a moment to arrange a
cocktail buffet or appetizer, then you must consider the antipasto.
Italian or Greek food shops or fine grocery stores may have everything you
need. Variety is the key to making your antipasto interesting.
You
may want to consider any or all of these items: Artichoke hearts,
marinated in oil and herbs, Spanish olives, calabresi olives, salad olives
with pimentos, Sicilian olives, calamata olives in olive oil, pepper strips,
cherry peppers, whole mushrooms, marinated in oil and herbs, hot peppers,
roasted red peppers, whole sweet peppers, marinated roasted eggplant, sweet
crisp yellow peppers, pepperoni, both hot and sweet, prosciutto, genoa salami,
hard salami, mortadella, provolone, mozzarella.
Arrange
everything in bite-size pieces. Sliced meats can be rolled into
cornucopias, large peppers an be cut into strips, and cheeses cut into sticks
or rolled slices.

12-14 fresh ripe plum tomatoes
2
1/2 tablespoons of fresh sliced garlic
2
1/2 tablespoons sliced green onion, white only
3/4
cup freshly chopped basil leaves - do not use dried
1/2
lemon, fresh
salt
and freshly ground pepper to taste
1/3
cup plus 1/4 cup extra virgin olive oil
3
cloves garlic sliced
a
baguette style peasant bread

Chop
the tomatoes into 1/4 inch dice, and place in a bowl. Toss with sliced
garlic and green onion. Add basil and toss gently.
Squeeze
the fresh lemon over all (about 1 to 1&1/2 teaspoon), add salt and pepper,
1/3 cup of the olive oil. Stir and set aside - do not refrigerate.
Slice
the bread into 3/4 inch slices.
Heat
the remaining 1/4 cup olive oil in small skillet. Saute the 3 cloves of
slice garlic over medium low heat until golden - remove garlic from the oil.
Toast
the bread slices in your oven, until golden on both sides, brush with the olive
oil - and top with the tomato mixture. Serve immediately.
